Garlic Butter Tomato Chicken

Instructions
Prep the chicken
Season the chicken breasts evenly on both sides with salt, pepper, and a pinch of your favorite herbs if desired.
Sear perfectly
Heat a splash of oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden and cooked through. Transfer to a plate.
Create the garlic butter sauce
In the same skillet, melt the butter over medium heat. Add minced garlic and diced Roma tomatoes. Sauté for 3-4 minutes until the tomatoes begin to break down and become saucy.
Combine and serve
Return the chicken to the skillet, spooning the tomato garlic butter over the top. Simmer for 1 more minute to heat through. Serve immediately.
